September Newsletter


Happy Autumn
Well, I slowed things down a bit through the summer. This is a Stuessis favorite time of year and summer is just too short to work any more that the bare minimum J But as the days get shorter and the weather cooler I am ready to get back to work.  I have greatly missed my freezer meals (although it was handy to have an empty freezer while Irene came to visit).

Freezer Meal Workshop
*What are they?  In about an hour you will assemble 10 meals (serving 4 people)  You will receive a packet to take home which includes freezer bags, recipes, directions, and side dish suggestions. Each meal will be labeled with contents & instructions to make dinner easy.  The morning before, choose the next day’s dinner entrĂ©e, and transfer it from freezer to fridge to defrost & marinate.  So simple!   
*There will also be a ‘Tasting Table’ will be set up where you can sample the ingredients - a wide array of oils, sauces, marinades, rubs & seasonings. Don’t forget Wildtree products contain NO food dyes, additives or preservatives, MSG, HFCS, minimal or no salt and sugar and are 100% peanut free!

COST:
$40 fee to cover all the Wildtree products we use, a few other ingredients,
freezer bags, labels, etc…

Based on some of the feedback I have received it looks like there is a preference for Friday nights.  I will be giving that a go in October (once my schedule shifts a bit but for September I will be sticking with the Sunday schedule. I am still open to feedback so if you have a preference for day and time please let me know.  Sunday September 25th at 10:00 and 2:00.  Sign up ASAP to save your spot.

Green Bean Soup

Green Bean Soup

My mom makes a delicious green bean soup.  She uses linguica which of course is yummy but I am trying to cook as vegetarian as my family will tolerate:)  I adapted this recipe from one of my favorite food blogs "Closet Cooking". A testament to how yummy it was...Colin devoured his bowl and Ali had seconds!

(makes 4-6 servings)

Ingredients:
1 tablespoon Bacon (or Garlic) Grapeseed Oil
1 onion (chopped)
1 carrot (chopped)
2 stalks celery (chopped)
6 cups chicken stock (or 6 C Water + 4TBSP Wildtree Chicken or Vegetable Bouillon)
1 # linguica (sliced-optional)
1 (19 ounce) can white beans (drained and rinsed)
2-3 Medium red potatoes, diced
1 TSP Hearty Spaghetti Blend
1 TBSP Garlic Galore
1  bay leaf
1 (19 ounce) can white beans (drained and rinsed)
pepper to taste
1 pound green beans (cleaned, trimmed and cut)

Directions:
1. Heat the oil in a large sauce pan.
2. Add the onions, carrot and celery and saute until tender, about 10-15 minutes.
3. Add the stock, linguica, green beans, potatoes, Spaghetti Blend, Garlic Galore, and bay leaf and simmer, covered on low heat for an 45-60 min. until vegetables are tender.
4. Empty can of beans and some of the broth into a blender (or use an immersion blender) to blend some of the beans to give a nice and creamy texture to the soup. Return to pot.
5. Add the remaining can of beans and simmer long enough to heat them.
