My Radio Debut

My friend Tracy convinced me to be a guest on her friend's internet radio show today Faust in the Morning. She did all of the prep work and I cooked a yummy holiday brunch for the boys
We had a few technical difficulties triggered by the toaster oven tipping the circuit breaker but I had fun and was shocked that I could enjoy stepping (way) out of my comfort zone.  Thanks for the push Tracy :)
Here is what we made:


Cranberry Spiced French Toast
SERVINGS: 4
INGREDIENTS:
    * 2 eggs
    * 2 tablespoons milk or half and half
    * 2 tablespoons warm water
    * 1 tablespoon Wildtree Cranberry Spice Blend
    * 4-6 slices of bread of your choice
PREPARATION:
Mix Cranberry Spice Blend into warm water for about 5 minutes or until cranberries get plump. Beat eggs and milk together in a wide dish, big enough for bread slices to fit. Add cranberry spice blend and mix well. Heat a buttered or oiled griddle or a non-stick pan over medium high heat. Dip bread into egg mixture and saturate, coating with cranberries and spices. Place into hot pan, flip when golden brown. Serve with syrup of your choice.
   
Toni's Thanksgiving Panini
SERVINGS: 2
INGREDIENTS:
    * 2 tablespoons of mayonnaise
    * 2 tablespoons Wildtree Cranberry Spice Blend (I substituted the Wildtree Cranberry     
      Jalapeno Jelly for the cranberry mayo)
    * 2 slices provolone cheese
    * 1/4 pound turkey breast, thinly sliced
    * 3 tablespoons Wildtree Natural Grapeseed Oil

    * 1 package Wildtree Old World Style Focaccia Bread, prepared according to package directions
    * 1 1/4 cup and 2 tablespoons water
    * 2 tablespoons Wildtree Natural Grapeseed Oil
PREPARATION:
Mix the mayonnaise with the Cranberry Spice Blend and set aside at room temperature.  In a saute pan over medium-high heat, cook the turkey in the Grapeseed Oil.  Cut the focaccia loaf into 4 slices.  Build a sandwich with the suggested ingredients.  Brush the outside of the sandwich with Grapeseed Oil and saute in a pan until golden brown.

Wildtree's Home Fries
SERVINGS: 4
INGREDIENTS:
    * 1 pound potatoes
    * 1 tablespoon butter
    * 1 tablespoon Wildtree Roasted Garlic Grapeseed Oil
    * 1 teaspoon Wildtree Home Fries Seasoning
PREPARATION:
Cut the potatoes lengthwise into halves. In a large sauce pan, cover the potatoes with sold water.. Simmer until almost cooked through but still firm and cut the potatoes into thick slices. Combine butter and Roasted Garlic Grapeseed Oil with the Home Fries Seasoning in a skillet. Add the potatoes and cook to the desired degree of doneness.
WILDTREE TIP: Prepare the home fries in advance and chill in the refrigerator. Heat the potatoes just before serving.
You may try this with other firm vegetables, such as broccoli, green beans or onions.

Cranberry Spice Apple Crisp
Serves 6
5 McIntosh apples, cored, peeled and sliced
2 T Wildtree Cranberry Spice blend
1/3 C butter, softened
1/3 C sugar 1/3 C flour
Preheat oven to 350 degrees F.

In a medium mixing bowl mix the apples and the Cranberry Spice Blend. Arrange the apples in a butter 8 x 8 glass baking dish. Combine the butter, sugar and flour in a bowl and mix well. Spread over the apples.

Bake at 350 degrees F for 30-45 minutes or until the apples are soft and the topping is golden brown. Serve warm or at room temperature with ice cream or whipped cream.

Gingerbread Crinkles

We just put a batch of these in the oven while we start the Christmas Tree-House smells like Christmas!
Gingerbread Crinkles

Ingredients
:
1 pkg. Gingerbread Cake Mix
1/2 cup softened unsalted butter
1 large egg
1 to 2 tablespoons hot water

Directions:
Stir the mix with the softened butter until even crumbs form. Add the egg and 1 tablespoon hot water. Knead until the dough comes together (dough will be a bit sticky), adding the final tablespoon of water if necessary. Divide the dough in half, wrap, and refrigerate for 1 hour (or up to 3 days).

Roll the dough into 2” balls. Dip tops in sugar, place on the prepared baking sheet, and flatten slightly.

Bake the cookies in a preheated 350 degree F oven for 12 to 14 minutes; they will be slightly soft when done. Allow the cookies to cool for 5 minutes; transfer to a rack to finish cooling.

November Freezer Meal Workshops


Freezer Meal Workshop
Each month I offer Freezer Meal Workshops where you prepare 10 different meals that each feed a family of 4 in less than 2 hours. November's workshops include lots of Slow Cooker recipes. Don't worry if you do not have one - recipes are easily adjustable. This is a great way to break out of that dinnertime rut and try some new recipes. The day before, just pop one into the fridge to defrost, and it's marinated and ready to cook. Dinner will be ready in no time and it will be healthy, delicious, easy & economical!  My second Freezer Meal Workshop went much smoother than the first and I am so happy with the positive feedback I have received.  Those who have attended have loved the meals and how easy they are to prepare.  The best part is the knowing what’s for dinner and that it will be healthy and delicious. Christmas will be here before you know it so stock your freezer with delicious convenient meals.
 My Fairhaven Workshop will be held on Sunday November 28th at 10 am or 3pm. 
Cost is $35 ($30 if you are one of my Culinary Club Members).
For an additional $20, I will prep the meals for you to pick up.

Thanksgiving Recipes

Basil Pesto Turkey
Provided by Wildtree Herbs from Warwick, RI
SERVINGS: 10
INGREDIENTS:
1/3 cup Wildtree Basil Pesto                  
1/3 cup Roasted Garlic Grapeseed Oil
12-14 pound turkey, fully thawed
PREPARATION:

Preheat oven to 400°F. In a small bowl, combine basil pesto and oil. Remove neck and giblets from cavity and pat turkey dry with paper towels. Tie legs with kitchen twine and tuck wings under bird. Rub basil pesto paste all over turkey and under the skin. Place turkey on a roasting rack and bake uncovered until the thickest part of the breast meat registers 160ºF and thigh meat registers 175ºF; about 2 to 2 1/2 hours.



Mashed Potato Casserole
Serves 6-8

4 pounds russet potatoes, peeled and cut into 1 inch chunks
1/2 cup of half & half
1/2 cup low sodium chicken broth
6 Tablespoons unsalted butter
4 large eggs
2 Tablespoons Onion & Chive Blend

Preheat oven to 375 degrees.

Bring potatoes (covered with water by an inch) to a boil in a large pot over high heat. Reduce to medium heat and simmer until potatoes are tender, about 20 minutes. Heat half-and-half, broth, butter and Onion & Chive Blend on low heat. Keep warm. Drain potatoes and transfer to a large bowl. Using an electric mixer on low speed beat potatoes slowly adding half-and-half mixture until smooth and creamy. Scrape bowl and beat in eggs one at a time until well blended. Pour into a 2 quart greased baking dish. Bake until potatoes rise and begin to brown about 35 minutes. Let cool about 10 minutes.

Make ahead ~ The baking dish with the potatoes can be covered with plastic wrap and refrigerated for up to 24 hours. When ready to bake, let the casserole sit at room temperature for 1 hour. Increase the baking time by 10 minutes.



Alan's Amazing Sweet Potatoes
Provided by LINDA YOUNG from WICHITA, KS
SERVINGS: 8
INGREDIENTS:
4 medium sweet potatoes, cut into cubes
1/2 cup Wildtree Natural Butter Flavor Grapeseed Oil
2-3 Tablespoons Wildtree Cranberry Spice Blend
1/4 cup unpacked light brown sugar
PREPARATION:

Pre-heat oven to 375º F.  Place sweet potatoes, Butter Oil and Cranberry Spice Blend in a large bowl and stir to coat. Transfer to a 2 quart baking dish and bake for 45 minutes. Remove from oven, stir and sprinkle brown sugar over potatoes. Return the potatoes to the oven and bake an additional 15 minutes.

Cranberry Spice Apple Crisp

This is so easy and so delicious.  Great way to use all those apples from apple picking! 
Cranberry Spice Apple Crisp
Serves 6

5 McIntosh apples, cored, peeled and sliced 


2 T Wildtree Cranberry Spice blend

1/3 C butter, softened 

1/3 C sugar 1/3 C flour

Pumpkin Trifle Recipe

This is the recipe for the Pumpkin Trifle I made at the Freezer Meal Workshop.  It was yummy!!

Pumpkin Trifle 
adapted from a recipe by Patricia B. from Indiantown, FL
Serves 6  
1 package Wildtree Pumpkin Quick Bread, prepared according to package directions 
2 T Wildtree Pumpkin Cheesecake Blend
1 jar caramel sauce 
1 can whipped cream 
10 ginger snap cookies (crushed)

Mix pumpkin cheesecake blend with whipped cream. Layer pumpkin bread, whipped cream, and caramel sauce in small individual glasses or a trifle dish. Top with whipped cream and drizzle caramel sauce on top.  Sprinkle crushed ginger snaps on top.

 
I made whip cream (use 2-16oz cartons of whipping cream-I found 1 was not enough) and caramel sauce (make 1/2 the caramel sauce recipe below) from scratch so I was guaranteed to have no HFCS or other unpronounceable ingredients! 

Caramel Sauce  (from Ina Garten)

1 1/2 cups sugar 

1/3 cup water 

1 1/4 cups heavy cream 


1/2 teaspoon pure vanilla extract

Direction 

Mix the water and sugar in a medium heavy-bottomed saucepan. Cook over low heat for 5 to 10 minutes, until the sugar dissolves. Do not stir. Increase the heat to medium and boil uncovered until the sugar turns a warm chestnut brown, about 5 to 7 minutes, gently swirling the pan to stir the mixture. Be careful – the mixture is extremely hot! Watch the mixture very carefully at the end, as it will go from caramel to burnt very quickly. Turn off the heat. Stand back to avoid splattering and slowly add the cream and vanilla. Don't worry - the cream will bubble violently and the caramel will solidify.

Simmer over low heat, stirring constantly, until the caramel dissolves and the sauce is smooth, about 2 minutes. Allow to cool to room temperature, at least 4 hours. It will thicken as it sits.

Newsletter

Summer Days 
Summer is quickly passing and before long the joy of relaxed, lazy days will be replaced with school, volunteering, PTO meetings, after school activities and sports, etc, etc., etc....I recently decided to join the Wildtree team as a representative.  Those of you who know me know that I am NOT a salesperson.  But what I am is... a busy working mom who is passionate about feeding my family delicious, healthy food.   About a year ago I became reconnected with a high school friend who was a team leader for Wildtree.  I began receiving her newsletters followed her blog and was very intrigued by the freezer meal workshops she hosts.  Unfortunately for me she lives in California.  She began to send me her menus and I would assemble them once a month at home.   When she came "home" for the summer she was kind enough to host them here.  These are amazing opportunities to prepare 10 meals in about 2 hours that you store in your freezer for those crazy nights when you are short on time and don't want to hit the drive-thru.  Wildtree has tons of amazing products to make getting dinner on the table faster and easier.  They also have many yummy new products which are destined to become old favorites.  Please let me know if you are interested in learning more about Wildtree products, attending a freezer meal workshop, or hosting a Wildtree tasting at your home.

Freezer Meal Workshop
My Fairhaven Workshop will be held on Monday, September 20 @ 6:30 pm.  Just in time to fill your freezer with quick and easy meals to help ease the back to school transition.  In 2 hours or less you will make 10 delicious dinners, all ready to put in your freezer!  $35 fee ($30 for my Culinary Club Members) to cover the cost of the Wildtree products.  Average cost per meal is $3.50 or less!  A tasting table will also be set up to try some of Wildtree's delicious products.  Space is limited so call or email me to reserve your spot now!  Bring a friend!

newsletter

as soon as I can figure out how to get this to work...

Gotta Start Somewhere...

Here is my first foray into blogging. They say the highest form of flattery is imitation...so I will give credit to my friend Jen Warr who inspired me to become involved with Wildtree, to host freezer meal workshops, and to bring information about all things related to food and health to my friends.

One thing I have learned as I begin this journey is that I am not as computer savy as I need to be.  This blog should emphasize that quite well as it is not exactly colorful...I promise to work on that.  I am also in the process of sending my first newsletter but have learned that group mailings look like spam and I have not found my way around that yet.  Therefore, my next blog entry will be my August Newsletter  :D
